Let's Cook Hungarian!

During the festive season we eat a lot of heavy foods so it is nice to have something light. Mind you if the weather keeps on like this, we may end up with a white Christmas and be grateful for the heavy foods! What I'm trying to say is that in New Zealand we are lucky to have so much fruit available to us around this time of the year. When you have friends come around it's nice to share a fruit cocktail with them. What's more it's easy to prepare beforehand and you can have some ready to serve in the fridge. You can substitute the alcohol with fruit juices or other non-alcoholic drinks. And you can also try using different combinations of fruit. I hope you enjoy it. Thank you for your support through the year and have a very healthy 2005.

Melon Cocktail (Dinnyekoktél)

Cut away the tough centre and seeds from the melons, then cut the flesh into fairly large cubes. Carefully mix the red and yellow melon cubes in a large glass bowl. Sprinkle with castor sugar. Drizzle with lemon juice, wine and apricot brandy. Mix again carefully. Cover well and leave to infuse for 4-6 hours in a refrigerator. Decorate with halved plums, morello cherries or cherries preserved in rum before serving. Jó étvágyat!
